This delicious, caramelized spread originated in the Middle Ages as a method of storing apples without refrigeration.

Arriving at colonial America, settlers gathered for an all-day affair of slow-cooking and stirring. The event is recollected as a romantic ritual, as the large wooden paddle required both a boy & girl to turn. Girls had their choice of partner, and that beau soon became known as her favorite … at least, for the long winter.

Thankfully, we’ve modernized with a slow-cooker & immersion blender, and while at first glance the ingredient list looks quite similar to applesauce, a few differences metamorphize the preserve into something richer, creamier and perfect slathered on toast, alongside your favorite cheese & cracker combination, or topping pancakes.

Low-Carb Apple Butter

Apple butter need not be a sugary condiment! This slow-cooker recipe rediscovers the natural sweetness of fresh-picked apples, cinnamon, ginger, and cloves for only 2 grams net carb for a tablespoon serving.

Ingredients

  • Non-stick cooking spray
  • 9 cups apples, cored and sliced Fugi or Gala apples, or similar sweeter varieties of apples, are preferred as the preserve contains no additional sweetener
  • 1/2 cup water
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp cloves

Instructions

  1. Coat your slow cooker with non-stick cooking spray.

  2. Add apples, water, and spices.

  3. Cover and cook on low for 9 hours.

  4. Blend cooked apples with an immersion blender.

  5. Remove the lid and cook on low for an additional hour, or until desired consistency.

  6. Store in glass jars, covered, and refrigerated for up to one month.
